ABSTRACT
Poultry products continue to be the cheapest animal-origin protein sources in human nutrition. There has been growing interest in enzymes and their usages in poultry nutrition during last three decades. Because of climatic changes and politic/economic challenges, access to raw materials is becoming difficult that results in increased ration cost. Therefore, alternative cereals and legumes as well as their by-products are replacing in corn and soybean in ration formulation. However, these alternatives are rich in non-starch polysaccharides (NSP) that are structural component of the plant cell wall. Poultry species have no endogenous enzymes to degrade the NPSs that are complex in the structure. Thus, they are not only undigested, but also adversely affect productivity and health. Exogenous carbohydrases (NSPases) are mixed at an NSP-specific format in a cocktail and are used in poultry diets. This review discussed the rationale of selection of NSPases and their formulation in a cocktail.
